Maple Persimmon Toast

Your morning toast just got an upgrade! Persimmons are one of my favorite winter fruits and go so well with greek yogurt. They're great on toast, but also pair nicely in a parfait. You can choose to sub maple syrup for honey, or completely exclude it if you prefer. If persimmons aren't your thing or not in season, try this recipe with bananas instead! You won't be disappointed. 

Garlic Hummus



Being in quarantine amidst this pandemic has me wanting to snack day in and day out. My family and I have finished all the cutie tangerines and apples that I normally reach for when wanting a healthier snack. Instead of grabbing a bag of chips or the girl scout cookies we have hoarded in our pantry, I decided to make some hummus loaded with of the veggies we have left in the fridge. This recipe only calls for a few ingredients so it's perfect for the days you spend at home and want to avoid that extra unnecessary trip to the grocery store. You can also use it as a dip for all those extra little veggies sitting in your fridge before they spoil. Enjoy!


Time: 10 minutes
Servings: 4
Calories: ~160 calories per a serving

Ingredients:
1 15 oz can of chickpeas
1/2 lemon
3 garlic cloves
2 tbsp tahini 
1/4 tsp cumin
5 ice cubes

Instructions:
1. In a food processor, combine the tahini and lemon. Blend ingredients until whipped together. This will give your hummus a creamier consistency.
2. Drain chickpeas. Add chickpeas, garlic cloves, cumin, and ice cubes to the food processor. Blend all ingredients together until smooth. Add salt to taste. If you need to thin out the hummus, use ice cold water. 
3. Spoon mixture onto a plate and spread out evenly. Top with olive oil and veggies or spices of your choice. Serve with toasted pita bread or enjoy with other veggies.

It was interesting to go through your blog post and see those attractive and must be delicious disshes prepared by your in the midst of Corona Virus manace that has gripped the whole world and took thousands of lives. It is a major desaster which the whole world is experience. Our church is focusing on the secipture from 2nd Chronicles 7:14 where God is saying to His people " If my people who are called by name humble themselves and pray and seek my face and turn themselves from their wicked ways then will I hear from heaven and forgive their sin and heal their land. This is a difficult time for us globally . Some how our country is still spared from a major desaster as so far only around 2000 are infected and over 50 are died. We have a large population of 1:30 billion which is next to China. We are praying far America and the European countries that are affected more by COVID-19 .
    i love getting connected with the people of God around the globe to be encouraged strengthened and praying for one another. I have been in the Pastoral ministry for last 40 yrs in this great city of Mumbai a city with a great contrast where richest of rich and the poorest of poor with the love of Christ to bring healing to the brokenhearted.
