Maple Persimmon Toast

Your morning toast just got an upgrade! Persimmons are one of my favorite winter fruits and go so well with greek yogurt. They're great on toast, but also pair nicely in a parfait. You can choose to sub maple syrup for honey, or completely exclude it if you prefer. If persimmons aren't your thing or not in season, try this recipe with bananas instead! You won't be disappointed. 

Strawberry Creamsicles

Light, creamy, and perfectly sweet. A springtime indulgence.



Time: 10 min + 4 hrs freeze time
Servings: 6
Calories: ~140 calories per serving

Ingredients:
1.5 cups chopped strawberries
1 cup heavy cream
2 tsp fresh lime juice
2 tsp splenda (or sweetener of choice)
1 tsp vanilla extract

Instructions:
1. In a small bowl, combine strawberries, lime juice, sweetener , and vanilla extract. Let sit to allow strawberries to release their juices while preparing whip cream. 
2. In a large bowl, use a mixer to whip cream until stiff peaks are formed. Fold strawberries into whip cream. 
3. Spoon strawberry whip into popsicle molds. Be sure to lightly tap popsicle mold against the counter to release air bubbles and ensure the molds are fully filled.
4. Freeze for 1 hour. Insert popsicle sticks and return to freezer for an additional 3 hours. To release popsicles, run mold under warm water for 10 seconds before pulling popsicle out.
